Innovation and sustainability: precision winemaking without sulfites

The new study published in the scientific journal Foods marks a turning point for modern oenology, demonstrating that the production of high-quality wines without the addition of sulfur dioxide is not only possible, but technically reproducible on a large scale.

The research stems from a strategic synergy between the Department of Agricultural, Food and Agro-Environmental Sciences of the University of Pisa and SV Consulting, which collaborated to validate a precision winemaking protocol over four consecutive vintages (2022–2025). Together with leading partners such as IFN, CNR and CERN, the team developed an integrated system that replaces the chemical protection of sulfites with rigorous technological control and the use of natural antioxidants.

At the heart of the project is the use of smart tanks, which make it possible to manage the entire fermentation ecosystem without ever exposing the product to oxygen:

  • Real-time monitoring: Advanced sensors enable continuous monitoring and data acquisition through a digital interface, allowing timely corrective actions throughout the winemaking process.
  • Inert gas management: The use of nitrogen in closed circuits prevents oxidation during pump-overs, creating an environment unfavorable to the growth of unwanted microorganisms.
  • Natural antioxidants: The use of grape seed extracts provides the necessary antioxidant protection in place of sulfites, preserving aromatic compounds, pigments, and phenolic structures.
  • Thermal precision: Automated temperature control ensures linear fermentation and prevents microbiological deviations.

The data collected confirm that the wines obtained show chemical stability and a sensory profile fully comparable to those produced using conventional methods. This approach is not only a response to the demands of increasingly health-conscious consumers, but also offers a concrete strategy to address the challenges of climate change, improving the resilience and sustainability of wineries.
