The wine sector is undergoing a phase of profound transformation and, in this context, continuous training and dialogue between academia and industry professionals are becoming strategic assets for wineries aiming for excellence.
In this regard, the first two sessions of the training course “Winery Operations Manager,” organized by SV Consulting in close collaboration with the Department of Agricultural, Food and Agro-Environmental Sciences of the University of Pisa, have successfully concluded. The initiative was created to provide practical tools and regulatory updates useful for winery operators.
During the first study days, the focus was placed on key pillars for the management of a modern winery:
- Winery design: analysis of plant layout and architecture to maximize production efficiency with a focus on energy sustainability.
- Hygiene and safety: implementation of rigorous protocols for space management, ensuring healthy environments and minimizing contamination risks.
- Fraud prevention: study of cutting-edge analytical technologies to combat fraud and protect product authenticity on the market.
- Filtration: advanced methodologies to ensure perfect biological stability and wine clarity.
- Fining: in-depth biochemical analysis of fining techniques to prevent haze formation and refine the organoleptic profile.
- Bottling and packaging: critical analysis of aseptic bottling processes and strategic management of primary and secondary packaging.
The success of these sessions was made possible thanks to the outstanding profile of the speakers involved, who successfully combined scientific rigor with practical application; their contribution was essential in stimulating debate and offering innovative solutions to the daily challenges faced by producers.
